Ingredients list:

Regarding the Zucchini Soup:

  • Four medium-sized zucchini noodles made with spirals
  • One tablespoon of olive oil
  • To taste, add salt and black pepper

Regarding the Pesto Sauce:

  • two cups of newly packed basil leaves
  • Grated Parmesan cheese, half a cup
  • half a cup of walnuts or pine nuts
  • two peeled cloves of garlic
  • Half a cup of extra virgin olive oil
  • To taste, add salt and black pepper.
  • One lemon, juiced (optional for brightness)

Add-on toppings:

  • Half a cherry tomato
  • grated Parmigiano-Reggiano
  • crushed red pepper flakes

Step By Step Guidelines:

1. Get the zucchini noodles ready:

  • Using a spiralizer, wash the zucchini and cut it into noodles-like forms.
  • Heat the olive oil in a big pan over medium heat. When the zucchini noodles are just cooked, add them and sauté for two to three minutes. Put some salt and black pepper over it. Watch out not to overcook the zucchini noodles because they can get mushy.
  • Take the pan off of the burner and place the zucchini noodles on the side.

2. Prepare the pesto glaze:

  • Place the peeled garlic cloves, pine nuts or walnuts, grated Parmesan cheese, and fresh basil in a food processor.
  • Pulse the components in order to chop them finely.
  •  While the food processor is operating, gradually add the extra virgin olive oil to the pesto until it thickens and becomes creamy.
  • To taste, add salt and black pepper to the pesto. If you'd like a little brightness, squeeze in some lemon juice.

3. Mix and Throw:

  • Cover the sautéed zucchini noodles with the newly produced pesto.
  • Work the pesto into the noodles until they are thoroughly coated.

4. Add-ons at Option:

  • For more taste and color, sprinkle crushed red pepper flakes, extra grated Parmesan cheese, and cherry tomatoes on top of the zucchini noodles.

5. Present:

  • You may serve the pesto-crusted zucchini noodles as a light main course or as a side dish right away.
