Tacos Birrias
Ingredients list:
- 3 pounds (1.4 kg) of chunked beef chuck roast or brisket
- Four dehydrated guajillo chiles, with stems and seeds
- Two dried ancho chiles with seeds and stems
- One sliced medium-sized onion
- Four minced garlic cloves
- 1 tablespoon of oregano, dry
- One teaspoon of cumin powder
- One tsp finely ground coriander
- Half a teaspoon of powdered cloves
- 1/4 tsp ground cinnamon
- To taste, add salt and pepper.
- Three to four cups of beef stock
To Serve:
- Tacos made of corn
- chopped cilantro, fresh
- chopped onion
- slices of lime
- Hot sauce or salsa
- Cotija or queso fresco cheese are optional.
Step By Step Guidelines:
1. Get the chilies ready:
- In a dry skillet over medium heat, toast the dried guajillo and ancho chiles for a few seconds on each side. Their flavor is improved by this.
- Transfer the roasted chilies to a bowl and pour hot water over them. Soak them for fifteen to twenty minutes, or until they get tender.
- When the chiles are tender, put them in a blender with one cup of the soaking water, chopped onion, minced garlic, cloves, cinnamon, oregano, cumin, and coriander, and season with salt and pepper. Process until a smooth sauce is achieved.
2. Prepare the Birria:
- Sear the beef chunks over medium-high heat in a large pot or Dutch oven until browned all over.
- After the meat has browned, cover it with enough beef broth and pour the chili sauce over it.
- After bringing the mixture to a boil, lower the heat to a simmer, cover it, and let it cook for three to four hours, or until the meat is soft and the flavors have combined. It can also be cooked for six to eight hours on low in a slow cooker.
3. Remove the Meat Cuts:
- After the meat is soft, shred it in the pot using two forks. The broth for the birria should be delicious and substantial.
4. Put Birria Tacos together:
- Corn tortillas should be heated until malleable over an open flame or in a dry skillet.
- Spoon each tortilla with shredded birria.
- Add some sliced onion, chopped cilantro, and a squeeze of lime juice on top.
- Crumble cotija or queso fresco cheese over top, if desired.
5. Present using Consommé:
- Spoon a little of the consommé de birria into individual bowls.
- Present the tacos alongside the consommé for a dip.
