Ingredients list:

  • One pound (450g) of Italian sausage or ground meat
  • One onion, chopped finely
  • three minced garlic cloves
  • One 28-oz can of crushed tomatoes
  • One 14-oz can of chopped tomatoes
  • Four cups of vegetable or beef stock
  • One cup of sauced tomatoes
  • One tsp of dried basil
  • One tsp of dehydrated oregano
  • One-half tsp dried thyme
  • To taste, add salt and black pepper.
  • About 6–8 sheets of broken lasagna noodles make roughly 2 cups.
  • Half a cup of ricotta
  • One cup of finely shredded mozzarella cheese
  • Grated Parmesan cheese, half a cup
  • Garnish with fresh parsley or basil, if desired.

Step By Step Guidelines:

1.  Prepare the Meat:

  • Using a spoon, break up the ground beef or Italian sausage and brown it over medium-high heat in a big saucepan or Dutch oven. When necessary, drain extra fat.

2.  Add the garlic and onion:

  • Cook the chopped onion in the pot until it becomes tender. Add the minced garlic and simmer, stirring, for one to two more minutes, or until fragrant.

3.  Mix the Broth and Tomatoes:

  • Add the tomato sauce, diced tomatoes, beef or veggie broth, and crushed tomatoes. Mix thoroughly.

4.  The season:

  • Add the salt, black pepper, dried thyme, dry oregano, and dried basil. Taste and adjust the seasoning. Simmer the soup for a while.

5.  Include Lasagna Noodles:

  • Add the lasagna noodles to the pot after breaking them up into smaller pieces. Cook until al dente, following the directions on the package.

6.  Get the cheese mixture ready:

  • Combine the grated Parmesan, shredded mozzarella, and ricotta cheese in a separate bowl.

7.  Serve:

  • Spoon hot soup into individual bowls.
  • Place a tablespoon of the cheese mixture on top of each serving.

8.  Accessory:

  • If preferred, garnish with fresh parsley or basil.

9.  Optional: Broil the Cheese (for a baked effect):

  • You can also broil the soup bowls for a few minutes to melt and bubble the cheese, if you'd like.

10.  Have fun:

  • Warm up the lasagna soup and savor its cozy taste!
